Summer Macaroni Salad-
Rating-* * * * *

Healthy Exchanges Food Newsletter July 1995, pg. 6. This was really good. I liked it a lot. And so did Vince. Vince said it tasted like his fathers recipe. I really liked the frozen peas in it. To me it tasted like deli bar macaroni salad, and the kind my dad loves. So I really liked it as well! 5 stars!

Layered Luscious Lemon Dessert-

Healthy Exchanges Food Newsletter July 1999, pg. 11. This was really good, and easy. I especially like how low in calories it is. Who can beat a dessert with only 96 calories! Not only that but it reminded me of a lemon pie, I would add a dollop of cool whip on top though to finish it off! All 5 stars.

Grilled Condiment Burgers-

Healthy Exchanges Food Newsletter July 2000, pg. 11. These tasted really good. Almost like a Big Mac. In fact so close, I used fat free Thousand Island dressing as a topping. However, they would not stay together while cooking for me. I don't know if it was because my grill has lost it's non stick coating or because the binding was not correct. However, just on taste alone, I will still give it 5 stars, cause I will be making these again.

Marinated Bean Salad-

Healthy Exchanges Food Newsletter July 2004, pg. 11. This exactly the recipe I needed. I love picnic and summer menus with 3 bean salad on the menu. Three has yellow, green, and red kidneys. In view of that, I added a can of dark red kidney beans to my finished product. I omitted bacon and celery, one because the salad I have in mind with this recipe doesn't have them and secondly because I don't like the texture or taste of wet bacon. Personally I did not like the pickling spice for this recipe. I omitted it the second time I made this, and doubled the green and yellow beans as I thought it could use more. To me that made this recipe the perfect three bean salad recipe. However, when I chose to leave the pickling spice in it did make a good "relish" for hot dogs and the like! And I would do that again as it was a new and different take on relish. I will also use this same recipe with pickling spice to make my own bread and butter refrigerator pickled veggies.
